These mini cheesecakes are simple to whip up and perfect for holiday gatherings or any special occasion! I love topping them with cherry pie filling, but they’re just as delicious with fresh berries or your favorite fruit.
1 package (12 ounces) of vanilla wafers
2 packages (8 ounces each) of cream cheese, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1 can (21 ounces) of cherry pie filling
Prep: Gather all your ingredients and preheat the oven to 350°F (175°C). Line two 24-cup mini muffin tins with paper liners.
Make the Crust: Crush the vanilla wafers into fine crumbs. Spoon about ½ teaspoon of crumbs into the bottom of each paper liner and press down gently to form the base.
Prepare the Filling: In a large mixing bowl, beat the cream cheese, sugar, eggs, and vanilla extract together until smooth and fluffy.
Assemble: Fill each muffin liner almost to the top with the cream cheese mixture.
Bake: Place in the preheated oven and bake for about 15 minutes, or until the centers are set. Let the cheesecakes cool completely.
Top and Serve: Once cooled, add a teaspoon of cherry pie filling on top of each mini cheesecake. Serve and enjoy!
