1 cup confectioners’ sugar

1 large egg

2 teaspoons vanilla extract

½ teaspoon almond extract (optional but SO good)

2 ½ cups all-purpose flour

½ teaspoon fine sea salt

For the icing:

2 cups confectioners’ sugar

2 to 4 tablespoons water

½ teaspoon vanilla extract (optional)

⅛ teaspoon almond extract (optional)

food coloring and sprinkles (optional)

Instructions

1. Mix & Chill: Beat ½ cup dairy-free butter + ¾ cup powdered sugar until creamy. Mix in 1 egg, 1 tsp vanilla, and ¼ tsp almond extract. Stir in 2 ¼ cups flour + ¼ tsp salt until combined. Shape into a disc, wrap, and chill 2+ hours.

2. Cut & Bake: Roll dough to ¼-inch thick, cut shapes, and bake at 375°F (190°C) for 9-11 mins until edges are lightly golden. Cool completely.

3. Make Icing: Whisk 1 ½ cups powdered sugar, 2-3 tbsp water, and ½ tsp vanilla until smooth. Adjust thickness with more sugar (for piping) or water (for glazing).

4. Decorate & Set: Ice cookies, add sprinkles if desired, and let dry uncovered 24 hours for hardened icing.
