2 large Eggs at room temperature

½ cup Unsalted Melted Butter lukewarm

1 teaspoon Vanilla Extract

Dry ingredients

¾ cup All-Purpose Flour

½ cup Unsweetened Cocoa Powder

1 teaspoon Baking Powder

1 cup Sugar-free Crystal Sweetener I used 1/2 cup white erythritol and 1/2 cup brown erythritol

½ cup Sugar-Free Chocolate Chips or chopped pecans or a mix of both

¼ teaspoon Salt

Instructions

Prep & Preheat

Preheat oven to 350°F (180°C).

Line an 8-inch square pan with parchment paper, leaving overhang for easy removal.

Mix Wet Ingredients

In a bowl, whisk 2 large eggs and 1 tsp vanilla extract until smooth. Set aside.

In another bowl, whisk ½ cup melted butter (lukewarm) and ¾ cup sugar-free monk fruit erythritol blend until creamy.

Slowly whisk in the egg mixture until fully combined.

Add Dry Ingredients

Gently fold in:

½ cup unsweetened cocoa powder

⅓ cup almond flour (or coconut flour for nut-free)

½ tsp baking powder

¼ cup sugar-free chocolate chips (optional)

Stir with a silicone spatula until just combined (don’t overmix).

Bake

Spread batter evenly in the pan (it’ll be thick).

Bake 20–25 minutes until:

Top is crackly

Edges are set, but center is slightly soft (toothpick should have a few crumbs).

Cool & Serve

Let cool 10 minutes in the pan, then lift out using parchment.

Transfer to a cooling rack (this stops overcooking).

For clean cuts, chill 1 hour before slicing.
